The ORIGINAL Steak Jibarito
Chicago restaurateur Juan "Peter" Figueroa introduced the jibarito at Borinquen Restaurant, a Puerto Rican restaurant in the Humboldt Park neighborhood, in 1996, after reading about a Puerto Rican sandwich created in Plátano Loco in 1991 substituting plantains for bread. The name is a diminutive of Jíbaro and means "little yokel".
The sandwich's popularity soon spread to other Latin-American restaurants around Chicago, including Mexican, Cuban and Argentinian establishments, and jibaritos now can be found in some mainstream eateries as well. So serving sandwiches on plantains is nothing new in the latin culture and has been a staple in Puerto Rico for many years, when Juan "Peter" Figueroa introduced the "Jibarito Sandwich" at Borinquen restaurant in Humboldt Park, people were surprised and delighted and though there are many copycats out there imitating.... the true and original "Jibarito" started with Juan "Peter" Figueroa.
Tena Renee aka "Ms. Jibarito" who is also from Humboldt Park area is very close friends to Juan Peter. and has been knowing him for over 40 years. Tena relocated to Atlanta, GA from Chicago in 2009, she realized there barely any Puerto Rican restaurants in Atlanta, like back home in Chicago so she wanted to bring that authentic Puerto Rican culture and flavor with the taste of home to the south with imitating and making her versions of the "Original Jibarito" sandwiches with hopes to win over the tongue palates and mouths of many.
